Ingredients
For the grain bowl
- 2 cups cooked white or brown rice
- 1 cup purple cabbage, shredded
- 1 cup carrots, shredded
- 1 avocado, diced
- ½ cup cucumbers, sliced
- ¼ cup fresh cilantro
- 2 green onions, sliced
- ¼ cup Fresh Gourmet® Umami Seasoned Diced Almonds
For the dressing
- 2 Tbsp soy sauce
- 1 Tbsp rice vinegar
- 1 Tbsp olive oil
- 1 tsp fresh grated ginger
- 1 tsp honey or maple syru
Instructions
- Prepare the base: Prepare rice according to package directions and fluff with a fork.
- Build the bowl: Divide rice between bowls. Arrange cabbage, carrots, cucumber, avocado, and herbs over the rice.
- Make the dressing: In a small bowl, whisk together dressing ingredients.
- Add crunch: Top with a generous sprinkle of Umami Seasoned Diced Almonds.
- Finish and serve: Drizzle with dressing and serve immediately.
