Ingredients

  • 4 cups fresh kale leaves (washed and torn)
  • ½ cup thinly sliced fennel
  • ¼ cup Fresh Gourmet Cranberry Honey Roasted Sliced Almonds
  • ¼ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Place kale in a large bowl. Drizzle with half of the olive oil and gently massage until slightly softened.
  2. Add fennel, Cranberry Honey Roasted Sliced Almonds, and Parmesan cheese.
  3. In a small bowl, whisk together remaining olive oil, lemon juice, salt, and pepper.
  4. Pour dressing over salad and toss to combine. Serve immediately.
