Ingredients

  • 1 cup canned chickpeas (rinsed and drained)
  • 1 cup shredded cabbage (mix of green and purple)
  • ½ cup shredded carrots
  • ½ cup small broccoli florets
  • ¼ cup Fresh Gourmet Cranberries Sunflower
  • ¼ cup fresh cilantro leaves
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar (or lemon juice)
  • Salt and pepper to taste

Instructions

  1. Prep the veggies: In a large bowl, combine shredded cabbage, carrots, and broccoli florets.
  2. Add chickpeas: Toss in the chickpeas.
  3. Mix in extras: Add Fresh Gourmet Cranberries Sunflower, and cilantro leaves.
  4. Make the dressing: In a small bowl, whisk olive oil, apple cider vinegar, salt, and pepper to your taste.
  5. Combine: Pour the dressing over the salad and toss well.
