Ingredients

For the grain bowl

  • 2 cups cooked white or brown rice
  • 1 cup purple cabbage, shredded
  • 1 cup carrots, shredded
  • 1 avocado, diced
  • ½ cup cucumbers, sliced
  • ¼ cup fresh cilantro
  • 2 green onions, sliced
  • ¼ cup Fresh Gourmet® Umami Seasoned Diced Almonds

For the dressing

  • 2 Tbsp soy sauce
  • 1 Tbsp rice vinegar
  • 1 Tbsp olive oil
  • 1 tsp fresh grated ginger
  • 1 tsp honey or maple syru

Instructions

  1. Prepare the base: Prepare rice according to package directions and fluff with a fork.
  2. Build the bowl: Divide rice between bowls. Arrange cabbage, carrots, cucumber, avocado, and herbs over the rice.
  3. Make the dressing: In a small bowl, whisk together dressing ingredients.
  4. Add crunch: Top with a generous sprinkle of Umami Seasoned Diced Almonds.
  5. Finish and serve: Drizzle with dressing and serve immediately.
