Ingredients
- 1 cup canned chickpeas (rinsed and drained)
- 1 cup shredded cabbage (mix of green and purple)
- ½ cup shredded carrots
- ½ cup small broccoli florets
- ¼ cup Fresh Gourmet Cranberries Sunflower
- ¼ cup fresh cilantro leaves
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar (or lemon juice)
- Salt and pepper to taste
Instructions
- Prep the veggies: In a large bowl, combine shredded cabbage, carrots, and broccoli florets.
- Add chickpeas: Toss in the chickpeas.
- Mix in extras: Add Fresh Gourmet Cranberries Sunflower, and cilantro leaves.
- Make the dressing: In a small bowl, whisk olive oil, apple cider vinegar, salt, and pepper to your taste.
- Combine: Pour the dressing over the salad and toss well.
