Grain Bowl with Caesar Crunch

Ingredients

• 1 cup farro

• ½ medium red onion, finely diced

• 2 cups cups finely diced Persian cucumber

• 1 (15 ounce) can chickpeas, rinsed and drained

• ½ cup crumbled feta cheese

• ¼ cup freshly chopped parsley

• ½ cup pea shoots or sprouts

• 3 tablespoons lemon juice

• ¼ cup extra-virgin olive oil

• kosher salt and freshly ground black pepper to taste

Instructions

• Add uncooked farro to a medium saucepan with 2 cups of water.

• Bring to a boil over high then simmer covered for approximately 12 minutes or until tender.

• Drain and transfer to a large bowl to cool for one hour uncovered or overnight in an airtight container.

• Once cooled, add red onion, cucumber, chickpeas, feta, mint, parsley and sprouts.

• Toss with lemon juice and olive oil and season with salt and pepper to taste. Top with Fresh Gourmet® Caesar Crunch and enjoy!
