Ingredients

  • 3 cups fresh arugula
  • ½ cup cucumber slices
  • ½ cup fresh figs (halved)
  • ¼ cup crumbled feta cheese
  • ¼ cup Fresh Gourmet Blueberry Cranberry
  • ¼ cup thinly sliced red onion
  • 2 tbsp fresh mint leaves
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prep the greens: Place arugula in a large bowl.
  2. Add fruits and veggies: Arrange cucumber slices, figs, and red onion on top.
