Farmer’s Market Salad with Parmesan Cheese Crisps

Ingredients

For the dressing:

• 1 teaspoon minced garlic, about 1 clove

• 1 teaspoon Dijon mustard

• 1 tablespoon mayonnaise

• 2 tablespoons white wine vinegar

• 1 tablespoon Fresh Gourmet® Lemon Juice

• ⅓  cup avocado oil or vegetable oil

• 1 teaspoon kosher salt to taste

• ½ teaspoon freshly ground black pepper to taste

For the salad:

• 1 head butter lettuce, chopped

• 3 vine-ripe tomatoes, diced

• ½  red onion, finely chopped

• 1 avocado, diced

• ⅓  cup crumbled blue cheese

• 2 tablespoons minced chives

• ⅛ cup Fresh Gourmet® Bacon-less Bits

Instructions

• In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.

• Set aside and refrigerate until ready to serve.

• To a large bowl, gently combine the arugula, blackberries, blueberries, snap peas, cucumber, mint, and basil leaves.

• Toss the salad with dressing, starting with a few tablespoons at a time.

• Top with avocado slices and Fresh Gourmet® Parmesan Crisps. Enjoy!
