Ingredients
For the dressing:
• 1 teaspoon minced garlic, about 1 clove
• 1 teaspoon Dijon mustard
• 1 tablespoon mayonnaise
• 2 tablespoons white wine vinegar
• 1 tablespoon Fresh Gourmet® Lemon Juice
• ⅓ cup avocado oil or vegetable oil
• 1 teaspoon kosher salt to taste
• ½ teaspoon freshly ground black pepper to taste
For the salad:
• 1 head butter lettuce, chopped
• 3 vine-ripened tomatoes, diced
• ½ red onion, finely chopped
• 1 avocado, diced
• ⅓ cup crumbled blue cheese
• 2 tablespoons minced chives
• ⅛ cup Fresh Gourmet® Bacon-less Bits
Instructions
• In a small bowl, whisk together garlic, mustard, mayonnaise, vinegar, and lemon juice. Gradually whisk in oil and season to taste with salt and pepper.
• Set aside and refrigerate until ready to serve.
• To a large bowl, gently combine the lettuce, tomatoes, red onion, avocado, blue cheese and chives. Toss the salad with dressing, starting with a few tablespoons at a time.
• Sprinkle with Fresh Gourmet® Bacon-Less Bits and enjoy!
