Ingredients

• 1 tablespoon olive oil

• 1 pound ground beef or turkey

• 1 ounce packet taco seasoning

• ½ cup water

• 1 cup Mexican rice, cooked

• ½ cup cherry tomatoes, halved

• ½ cup shredded lettuce

• 1 jalapeño, sliced

• 4 tablespoons sour cream

• ¼ cup guacamole

• ¼ cup red and green onions, finely diced

• Fresh Gourmet® Southwest Crunch and lime wedges for garnish

Instructions

• In a large, rimmed skillet, heat olive oil over medium-high heat and cook the ground meat until golden brown, about 8 minutes.

• Add water and taco seasoning and cook until the water is absorbed and the sauce has thickened.

• Divide the rice, tomatoes, lettuce, jalapeño, sour cream, guacamole, onions, Fresh Gourmet® Southwest Crunch, and lime wedges into 4 bowls or meal prep containers. Enjoy right away or as leftovers the next day.
