Ingredients

For the dressing:

• ¼ cup extra virgin olive oil

• ¼ cup lemon juice

• 2 teaspoons honey

• 1 teaspoon kosher salt

• ½ teaspoon ground black pepper

For the salad:

• 6 cups baby arugula

• 1 apple, cored and thinly sliced

• ¼ cup shredded Parmesan cheese

• 3 teaspoons pepitas and sesame seeds

• Fresh Gourmet® Sunflower Seed Topper for garnish

• Fresh Gourmet® Dried & Sweet Cranberries for garnish

Instructions

• In a large bowl, whisk together the olive oil, lemon juice, honey, kosher salt, and black pepper.

• Add the arugula and apple to the bowl and toss until well coated.

• Top with shaved Parmesan, pepitas, sesame seeds, Fresh Gourmet® Sunflower Seed Topper, and Fresh Gourmet® Dried & Sweet Cranberries.
