Ingredients
- 4 large russet potatoes
- 3 Tbsp unsalted butter
- ½ cup sour cream
- ½ cup shredded cheddar cheese (plus extra for topping)
- ½ tsp kosher salt
- ¼ tsp black pepper
- ½ cup Fresh Gourmet® Real Bacon Pieces
- 2 Tbsp chopped fresh chives
Instructions
- Scrub and dry potatoes well, then pierce each with a fork. For crisp skins and fluffy insides, rub with a little oil and sprinkle with salt before baking.
- Preheat oven to 400°F. Bake potatoes directly on the oven rack for 50–60 minutes until tender.
- Remove from oven and let cool slightly. Slice each potato lengthwise and carefully scoop out the insides into a bowl, leaving a thin shell.
- Mash potato flesh with butter, sour cream, cheddar cheese, salt, and pepper until creamy.
- Stir in half of the Fresh Gourmet® Real Bacon Pieces.
- Spoon the mixture back into potato shells, mounding generously. Top with extra cheese and bake for 10 minutes until melted and golden.
- Finish with remaining bacon pieces and a sprinkle of fresh chives. Serve warm.
